So about two weeks ago my little nursing baby was diagnosed with a milk protein intolerance. I won’t go into detail about what had us rushing to the pediatrician with his diaper in a plastic bag but let’s just say it was not nice. He’s still having some issues so the next step is for me to give up gluten. This has forced me to do a lot of research into eating dairy and gluten free and as a result I’ve come across the Paleo lifestyle* and I was really intrigued by all the people who swear that it has changed their lives. So we are giving it a shot. Now let’s be clear, we are not eating “strict” or “perfect” Paleo. I mean I’m pretty sure cavemen didn’t have balsamic vinegar or bottles of cold pressed virgin olive oil at their disposal. But we are just trying to eat healthier and trying out a lot of the Paleo recipes but I’m still nursing so there will be occasional sweet potato fries and rice. Also, can’t see my three year old giving up pizza and chicken nuggets anytime soon.
Since salads are a great Paleo meal, I decided to make some of my favorite salad dressing. I’ve been making this for so long I’m not sure where I originally found the recipe. It’s a great alternative to buying dressing at the store that are full of fake ingredients and it tastes a WHOLE lot better!
Easy Balsamic Vinaigrette
Ingredients:
1/2 cup Olive Oil
2 tablespoons balsamic vinaigrette
1 tablespoon Dijon Mustard (I used Organicville)
2 cloves garlic, minced
Directions:
Mix all the ingredients together and use as much as desired on salads or as a marinade for meat. Store in a covered container in the fridge.
