Folks, I am back in a kitchen of my own and I couldn’t be happier about it. It’s been a long four months while we were looking for a new house but we found the perfect one and I love my kitchen! So for my first slow cooker dish in my new kitchen I chose this one because it takes about two minutes of prep time. Nothing makes me happier than putting 2-3 ingredients in a slow cooker and having a delicious meal for dinner. I’ve seen this idea on two food blogs that I follow:

For my version I did this:
Ingredients:
150z bottle of Salsa Verde (I used Whole Foods brand but any brand of green salsa will work. Trader Joe’s makes a good one.)
2lbs chicken thighs
2 onions, chopped in big pieces (optional)
Directions:
1. Put everything in your slow cooker and cook on Low 7-8 hours or on high for 4 hours. Chicken should fall apart and be easy to shred.
You can serve this chicken on rice like I did. It would also be good on a tostada, or in taco shells or in tortillas. You can also add toppings like cilantro, guacamole, cheese or sour cream.
For Dairy Free version: Omit cheese as a topping
For Paleo version: Omit rice and use guacamole and cilantro as a topping
