Power Protein Pancakes

My four year old has declared a war on eggs. No egg shall grace his plate without monumental amounts of whining and complaining. So what’s a mom to do? Make some freaking sneaky egg hiding pancakes, that’s what!  So these pancakes are also gluten free so that’s a win for us too.

Power Protein Pancakes

Makes approx 12 pancakes

3 bananas

3 eggs

1 cup almond flour

add a little bit of almond milk if the mixture is not liquid-y enough. Or you can also add another egg.

Mash everything together and then you have a wonderful pancake batter with which to deceive your children with. 🙂 Go forth and be smug!
